Grill Tip #1Always cook "low and slow". That'll allow the grill, charcoal, wood, smoke, and other flavors to work their magic. You can always crank up the heat if you need to but it's tough to lower it.

NEW FOR 2008BBQ Classes.
Upcoming 2008 Competition Schedule Due to a lot of commitments in the spring I will be missing many of the regional competitions. However that will allow me time to focus on class scheduling and select catering. A few more competitions may come up based on scheduling.
