Grill Tip #1

Always cook "low and slow".  That'll allow the grill, charcoal, wood, smoke, and other flavors to work their magic.  You can always crank up the heat if you need to but it's tough to lower it.

SMOKE THAT BUTT!

Pork butts take at least  6 hours and up to 12 to  cook at about 225 degrees.  I like pecan and apple wood for pork.

Here's a shoulder after 11 hours...only 4 more to go.  All you need is buns, slaw, and vinegar sauce and you've got a meal!

NEW FOR 2008

BBQ Classes.

  •     If you ever wanted to really learn to barbeque and grill this is for you.  Whether it's lump charcoal, wood, smoking, or gas you'll learn the "ins and outs" of cooking outdoors, what wood to use, and how to put together both traditional and upscale barbeque meals.
  •     Classes require a minimum of 10 people.  If you host at your home there is no charge for the host (with 10 paying guests).

  •     For only $50 per person you'll get cook enough food to feel like a stuffed pig!

Upcoming 2008 Competition Schedule

Due to a lot of commitments in the spring I will be missing many of the regional competitions.  However that will allow me time to focus on class scheduling and select catering.  A few more competitions may come up based on scheduling.
